Recipe – Roasted Salmon with Roasted Broccoli

This is a quick and healthy meal loaded with protein and healthy fats such as Omega-3s. The recipe is for one person but it is easily doubled or prepared for as many people as you are serving. This recipe also meets the dietary recommendations for the RepairVite™ and ClearVite™ diets. You can make this into a family meal by serving brown rice or quinoa separately if your carbohydrates are limited and theirs are not. A recipe for sauteed swiss chard is also listed below in you want more tasty greens in your diet.


Roasted Salmon with Roasted Broccoli

Prep Time: 20 minutes

Cook Time: 25 minutes

Serves One


  • 6 oz. wild caught salmon filet
  • 8 oz. organic broccoli
  • ¼ organic red onion, sliced
  • 1 organic garlic clove, sliced
  • Organic Olive Oil
  • Sea Salt
  • Pepper
  1. Preheat oven to 400 degrees Fahrenheit
  2. Slice garlic clove and cut broccoli into bite-sized pieces
  3. Add garlic and broccoli to a large sheet pan
  4. Drizzle with olive oil, sprinkle with salt and pepper and use hands to cover the vegetables with the oil, salt, and pepper
  5. Place pan in 400 degree oven and roast for 20-25 minutes or until desired doneness, stirring halfway through
  6. Rub olive oil on all sides of salmon and sprinkle with salt and pepper
  7. Place salmon skin side down on a sheet pan and put in 400 degree oven
  8. Cook salmon for 10-15 minutes, depending on thickness of fillet
  9. Salmon is cooked when the inside is the same pink color as the outside
  10. Remove both dishes from the oven and serve


Sauteed Swiss Chard

Prep Time: 5 minutes

Cook Time: 5-7 minutes

Serves One


  • 1 cup sliced (½ inch ribbons) organic swiss chard
  • 1/2 small organic shallot (optional)
  • 1 organic garlic clove, sliced
  • 1 tsp. organic red wine vinegar
  • Organic olive oil
  • ½ tsp. organic maple syrup (optional)
  1. Wash swiss chard well
  2. Slice into ½ inch ribbons and put firmly, but not crushed, into a cup measure for one cup
  3. Slice one garlic clove
  4. Put large saute pan (with a lid) on medium heat and add olive oil
  5. Add swiss chard and garlic to pan
  6. Put lid on pan
  7. Stir occasionally until swiss chard is wilted
  8. Add 1 tsp. red wine vinegar (or more to taste) and ½ tsp. maple syrup (optional)
  9. Stir and serve
